U Tommyjevom master chef tjednu donosimo vam dašak “Taste the Mediterranean“ gastrofestivala. Točnije, njegova kompetitivnog dijela u kojem su snage odmjerili mladi chefovi. 

Trebalo je napraviti jelo koristeći namirnice iz košare iznenađenja koje je osigurao partner manifestacije, splitska tvrtka “Tommy”. Ona je već dugi niz godina pratitelj ovakvih i inih događanja u kojima sudjeluje sa svojim provjerenim, domaćim, najkvalitetnijim proizvodima. A što je najbolje, nisu oni samo rezervirani za chefove, ne, ne, tu su na policama njihovih dućana, pristigli s naših polja, farmi, mora...

U “košari iznenađenja” našli su se domaća junetina, bundeva, povrće, začini, gljive... Nakon brzinskog, 15-minutnog dogovora sa svojim mentorima chefovima, kuhari su krenuli u 90-minutni proces kuhanja.

Drugo mjesto osvojila je chefica Antonia Dujmov, čiji je recept oduševio žiri i koji vam donosimo danas kao prijedlog za ručak.

Priprema

Vrijeme pripreme: 1 sat i 30 minuta

Juneći ramstek očistimo od žila i viska masnoće. Narežemo na fete cca 150-200 g, stavimo u pogodnu posudu malo posolimo sa cvijetom soli,mljeveni papar u zrnu,4-5 čili papričica, 5-6 režnja češnjaka i svježeg timijana. Zatim pokrijemo suncokretovim uljem da ga prekrije i pustimo ga da odstoji. Očistimo hokaido tikvu od kore, izvadimo sa strane sjemenke i stavimo na papirnati ubrus. Očišćenu hokaido tikvu  izrežemo na manje kockice.

U pogodnu posudu na malo maslinovog ulja stavimo pržiti sitno iskosanu  kapulu, kad kapula zazlati dodajemo iskosanu hokaido tikvu, posolimo, popaprimo,stavimo par grančica timijana te pustimo da tikva omekša. Očišćene tikvine sjemenke na ugrijanoj tavi bez masnoće tostiramo sjemenke do zlatne boje,posolimo. Ostatak kapule izrežemo na tanke kolutiće, stavimo između ubrusa i pustimo da ubrus upije visak tekućine te nakon toga tanke kolutića stavimo u brašno, prosijemo, stavljamo pržiti u duboko ulje do zlatno žute boje.

Gotove pržene kolutiće stavljamo na papir da papir upije visak masnoće, malo posolimo. Očistimo sipak, i ocijedimo sok. U pogodnu posudu stavimo crno vino da se reducira(iskuhava). Na pola reduciranog(iskuhanog)vina stavljamo prethodno ocijeđeni sok od sipka. Kuhamo dok nam redukcija ne poprimi kremastu strukturu. U manju posudu stavimo malo maslinovog ulja,suncokretovog ulja,svježeg timijana i par očišćenih rezanja češnjaka, blago prokuhamo pazeći da nam ulje ne zagori te stavimo posudu sa strane na hlađenje.

Očistimo gljive i zatim ih isjeckamo ih na tanje ploske. U manju posudu stavljamo maslac da se blago otopi s malo čili papričica, dodajemo tri vrste gljiva i lagano ih glaziramo na maslacu u kraj ih posolimo cvijetom soli. Zagrijemo tavu, na naglo stavljamo prethodno marinirano meso samo da lagano uhvati koricu i vadimo van(ja sam svaku stranu pržila otprilike 1-2 min ovisno o debljini mesa). U istoj tavi stavljamo maslac, češnjak i timijan te vraćamo natrag steakove na aromatiziranom maslacu i lagano podlijevamo preko njih. Serviramo.

U Tommyjevom master chef tjednu donosimo vam dašak “Taste the Mediterranean“ gastrofestivala. Točnije, njegova kompetitivnog dijela u kojem su snage odmjerili mladi chefovi. 

Trebalo je napraviti jelo koristeći namirnice iz košare iznenađenja koje je osigurao partner manifestacije, splitska tvrtka “Tommy”. Ona je već dugi niz godina pratitelj ovakvih i inih događanja u kojima sudjeluje sa svojim provjerenim, domaćim, najkvalitetnijim proizvodima. A što je najbolje, nisu oni samo rezervirani za chefove, ne, ne, tu su na policama njihovih dućana, pristigli s naših polja, farmi, mora...

U “košari iznenađenja” našli su se domaća junetina, bundeva, povrće, začini, gljive... Nakon brzinskog, 15-minutnog dogovora sa svojim mentorima chefovima, kuhari su krenuli u 90-minutni proces kuhanja.

Drugo mjesto osvojila je chefica Antonia Dujmov, čiji je recept oduševio žiri i koji vam donosimo danas kao prijedlog za ručak.

Priprema

Vrijeme pripreme: 1 sat i 30 minuta

Juneći ramstek očistimo od žila i viska masnoće. Narežemo na fete cca 150-200 g, stavimo u pogodnu posudu malo posolimo sa cvijetom soli,mljeveni papar u zrnu,4-5 čili papričica, 5-6 režnja češnjaka i svježeg timijana. Zatim pokrijemo suncokretovim uljem da ga prekrije i pustimo ga da odstoji. Očistimo hokaido tikvu od kore, izvadimo sa strane sjemenke i stavimo na papirnati ubrus. Očišćenu hokaido tikvu  izrežemo na manje kockice.

U pogodnu posudu na malo maslinovog ulja stavimo pržiti sitno iskosanu  kapulu, kad kapula zazlati dodajemo iskosanu hokaido tikvu, posolimo, popaprimo,stavimo par grančica timijana te pustimo da tikva omekša. Očišćene tikvine sjemenke na ugrijanoj tavi bez masnoće tostiramo sjemenke do zlatne boje,posolimo. Ostatak kapule izrežemo na tanke kolutiće, stavimo između ubrusa i pustimo da ubrus upije visak tekućine te nakon toga tanke kolutića stavimo u brašno, prosijemo, stavljamo pržiti u duboko ulje do zlatno žute boje.

Gotove pržene kolutiće stavljamo na papir da papir upije visak masnoće, malo posolimo. Očistimo sipak, i ocijedimo sok. U pogodnu posudu stavimo crno vino da se reducira(iskuhava). Na pola reduciranog(iskuhanog)vina stavljamo prethodno ocijeđeni sok od sipka. Kuhamo dok nam redukcija ne poprimi kremastu strukturu. U manju posudu stavimo malo maslinovog ulja,suncokretovog ulja,svježeg timijana i par očišćenih rezanja češnjaka, blago prokuhamo pazeći da nam ulje ne zagori te stavimo posudu sa strane na hlađenje.

Očistimo gljive i zatim ih isjeckamo ih na tanje ploske. U manju posudu stavljamo maslac da se blago otopi s malo čili papričica, dodajemo tri vrste gljiva i lagano ih glaziramo na maslacu u kraj ih posolimo cvijetom soli. Zagrijemo tavu, na naglo stavljamo prethodno marinirano meso samo da lagano uhvati koricu i vadimo van(ja sam svaku stranu pržila otprilike 1-2 min ovisno o debljini mesa). U istoj tavi stavljamo maslac, češnjak i timijan te vraćamo natrag steakove na aromatiziranom maslacu i lagano podlijevamo preko njih. Serviramo.
