Jeste li čuli za ošmugalj? Riječ je o samonikloj grmolikoj mediteranskoj biljci koja raste na zemljištima s visokim salinitetom, a kod nas je najčešća u okolici Bibinja i u delti Neretve, premda ga se može naći drugdje, obično na morem nanesenom pijesku ili lažini. Poznat je još pod nazivima sodarka, caklenjača i fratrova brada. Ono što je važnije za ovu priču je da ošmugalj mnogi smatraju delikatesom. Osobito je cijenjen u Italiji, gdje ga zovu agretti i barba dei frati, a popularan je u tolikoj mjeri da je tamo razvijena i danas sasvim uobičajena njegova vrtna varijanta.

U kulinarskom smislu ošmugalj je vrlo svestran. Možete ga jesti svježega na salatu, možete ga lešati poput blitve ili naglo sotirati, možete ga ubaciti u rižot, tjesteninu ili fritaju, njime možete začiniti povrtne juhe i namaze, a pronašli smo čak i recept za muffine s ošmugaljem (dobro zvuči, potražite ga ovdje).

Jedini mu je nedostatak - mislimo na ovaj samonikli, naravno - u tome što je fin za jelo samo dok je sasvim mlad. Čim malo odrveni, postaje neugodno vlaknast. Sezona mu traje tek tri tjedna, a počinje na proljeće. Ako ste mu baš veliki ljubitelj, pokušajte ga uzgojiti. Upućeni tvrde da se mlade biljčice uspješno daju presaditi s divljih staništa u povrtnjake ili u pitare s običnom zemljom za cvijeće, samo treba voditi računa o tome da ošmugalj voli zalijevanje morskom vodom, stoga ga smjestite podalje od ostalog zelenila jer malo koja biljka druga voli takve uvjete. Možete ga uzgojiti i iz sjemena, ali tu ćete trebati malo strpljenja i sreće jer klijavost mu je u pravilu slaba.

Kako god da nabavite svoj buden ove halofilne delikatese, vjerujemo da ćete u njoj uživati. Predlažemo vam i recept iz kuharice slavnog kuhara Pellaprata, za slučaj da već nemate svoju omiljeni ili ste spremni na malo iskušavanja. 

Trebat će vam ošmugalj, ljutika, kapari, zeleni papar iz salamure, balzamični ocat i maslinovo ulje. Najprije potopite ošmugalj sat vremena u mlakoj vodi kojoj ste dodali 1/4 bijelog balzamičnog octa. Potom ga ocijedite i spreman je za korištenje. Ljutiku sotirajte u dosta ulja, na laganoj vatri, a kad se počne listati, procijedite je (ulje sačuvajte) i ubacite u blender s kaparima i paprom iz salamure. Ošmugalj bacite na zagrijano ulje u kojem se sotirala ljutika i miješajte 3-4 minute. Zatim dodajte pire od ljutike i pirjajte na laganoj vatri desetak minuta. Spremite u sterilne staklenke i koristite kao prilog uz ribu ili uz dodatak bijeloga vina kao podlogu za pripremu piletine, rižota ili preljev za tjesteninu. Usitnjen, uz dodatak kremastog ili mladog sira postaje delikatesan namaz.

Jeste li čuli za ošmugalj? Riječ je o samonikloj grmolikoj mediteranskoj biljci koja raste na zemljištima s visokim salinitetom, a kod nas je najčešća u okolici Bibinja i u delti Neretve, premda ga se može naći drugdje, obično na morem nanesenom pijesku ili lažini. Poznat je još pod nazivima sodarka, caklenjača i fratrova brada. Ono što je važnije za ovu priču je da ošmugalj mnogi smatraju delikatesom. Osobito je cijenjen u Italiji, gdje ga zovu agretti i barba dei frati, a popularan je u tolikoj mjeri da je tamo razvijena i danas sasvim uobičajena njegova vrtna varijanta.

U kulinarskom smislu ošmugalj je vrlo svestran. Možete ga jesti svježega na salatu, možete ga lešati poput blitve ili naglo sotirati, možete ga ubaciti u rižot, tjesteninu ili fritaju, njime možete začiniti povrtne juhe i namaze, a pronašli smo čak i recept za muffine s ošmugaljem (dobro zvuči, potražite ga ovdje).

Jedini mu je nedostatak - mislimo na ovaj samonikli, naravno - u tome što je fin za jelo samo dok je sasvim mlad. Čim malo odrveni, postaje neugodno vlaknast. Sezona mu traje tek tri tjedna, a počinje na proljeće. Ako ste mu baš veliki ljubitelj, pokušajte ga uzgojiti. Upućeni tvrde da se mlade biljčice uspješno daju presaditi s divljih staništa u povrtnjake ili u pitare s običnom zemljom za cvijeće, samo treba voditi računa o tome da ošmugalj voli zalijevanje morskom vodom, stoga ga smjestite podalje od ostalog zelenila jer malo koja biljka druga voli takve uvjete. Možete ga uzgojiti i iz sjemena, ali tu ćete trebati malo strpljenja i sreće jer klijavost mu je u pravilu slaba.

Kako god da nabavite svoj buden ove halofilne delikatese, vjerujemo da ćete u njoj uživati. Predlažemo vam i recept iz kuharice slavnog kuhara Pellaprata, za slučaj da već nemate svoju omiljeni ili ste spremni na malo iskušavanja. 

Trebat će vam ošmugalj, ljutika, kapari, zeleni papar iz salamure, balzamični ocat i maslinovo ulje. Najprije potopite ošmugalj sat vremena u mlakoj vodi kojoj ste dodali 1/4 bijelog balzamičnog octa. Potom ga ocijedite i spreman je za korištenje. Ljutiku sotirajte u dosta ulja, na laganoj vatri, a kad se počne listati, procijedite je (ulje sačuvajte) i ubacite u blender s kaparima i paprom iz salamure. Ošmugalj bacite na zagrijano ulje u kojem se sotirala ljutika i miješajte 3-4 minute. Zatim dodajte pire od ljutike i pirjajte na laganoj vatri desetak minuta. Spremite u sterilne staklenke i koristite kao prilog uz ribu ili uz dodatak bijeloga vina kao podlogu za pripremu piletine, rižota ili preljev za tjesteninu. Jeste li čuli za ošmugalj? Riječ je o samonikloj grmolikoj mediteranskoj biljci koja raste na zemljištima s visokim salinitetom, a kod nas je najčešća u okolici Bibinja i u delti Neretve, premda ga se može naći drugdje, obično na morem nanesenom pijesku ili lažini. Poznat je još pod nazivima sodarka, caklenjača i fratrova brada. Ono što je važnije za ovu priču je da ošmugalj mnogi smatraju delikatesom. Osobito je cijenjen u Italiji, gdje ga zovu agretti i barba dei frati, a popularan je u tolikoj mjeri da je tamo razvijena i danas sasvim uobičajena njegova vrtna varijanta.
