Jučer nas je razveselila vijest da je TasteAtlas proglasio brujet najboljim hrvatskim jelom pa nam se brujet sve nešto mota po glavi... Brujet, odnosno brudet ili brodet (a sve to od brodetto, od brodo, to jest juha) jušno je jelo s komadima ribe, najčešće i krumpira, a umjesto ribe, ili pak uz nju, u teći se mogu naći škampi ili koja druga vrsta raka, školjke, lignje, hobotnica pa čak i žabe. Rado bismo ga pripremili, dobro će nam sjesti nakon teške blagdanske spize, samo za koji se odlučiti?

Mi smo se na kraju uspjeli odlučiti, ali nije riječ ni o jednom od gore spomenutih sastojaka. U pitanju nisu ni jegulje, njih smo, naravno, računali pod ribe. Odgovor ćete pronaći u receptu, mogao bi vam se svidjeti jer rezultat je za polizat prste.
Brujet od muzgavaca
Sastojci:
800 g očišćenih muzgavaca
400 g krumpira
150 ml bijelog vina
50 ml prošeka
2 režnja češnjaka
1 luk
1 žlica koncentrata rajčice
maslinovo ulje
peršin
sol, papar
Priprema:
Muzgavci će biti mekši ako ih dan ranije zamrznete, ako nemate vremena, nakon što su očišćeni i oprani malo ih istucite. Stavite ih u lonac hladne vode pa nakon što uzavru kuhajte nekih pola sata do 45 minuta, procijedite, a vodu sačuvajte.
Na maslinovom ulju zažutite lisnato narezan luk, kad uhvati boju dodajte mu usitnjeni češnjak pa miješajte dok ne zamiriše, Dodajte koncentrat rajčice i kuhajte uz miješanje dok ne potamni, zatim zalijte vinom, pustite da ispari alkohol pa dodajte otprilike 300 ml vode u kojoj su se kuhali muzgavci. Dobro promiješajte pa dodajte muzgavce narezane na komade te dodajte krumpir narezan na komade, sol i papar. Ako nije dovoljno tekućine, dodajte još vode u kojoj su se kuhali muzgavci
Kuhajte dok krumpir ne omekša, bez miješanja, uz povremeno protresanje teće te po potrebi podlijevajte vodom u kojoj su se kuhali muzgavci. Pri kraju dodajte prošek i nasjeckani peršin te kušajte treba li još soli.

Jučer nas je razveselila vijest da je TasteAtlas proglasio brujet najboljim hrvatskim jelom pa nam se brujet sve nešto mota po glavi... Brujet, odnosno brudet ili brodet (a sve to od brodetto, od brodo, to jest juha) jušno je jelo s komadima ribe, najčešće i krumpira, a umjesto ribe, ili pak uz nju, u teći se mogu naći škampi ili koja druga vrsta raka, školjke, lignje, hobotnica pa čak i žabe. Mi smo se na kraju uspjeli odlučiti, ali nije riječ ni o jednom od gore spomenutih sastojaka. U pitanju nisu ni jegulje, njih smo, naravno, računali pod ribe. Odgovor ćete pronaći u receptu, mogao bi vam se svidjeti jer rezultat je za polizat prste.
Brujet od muzgavaca
Sastojci:
800 g očišćenih muzgavaca
400 g krumpira
150 ml bijelog vina
50 ml prošeka
2 režnja češnjaka
1 luk
1 žlica koncentrata rajčice
maslinovo ulje
peršin
sol, papar
Priprema:
Muzgavci će biti mekši ako ih dan ranije zamrznete, ako nemate vremena, nakon što su očišćeni i oprani malo ih istucite. Stavite ih u lonac hladne vode pa nakon što uzavru kuhajte nekih pola sata do 45 minuta, procijedite, a vodu sačuvajte.
Na maslinovom ulju zažutite lisnato narezan luk, kad uhvati boju dodajte mu usitnjeni češnjak pa miješajte dok ne zamiriše, Dodajte koncentrat rajčice i kuhajte uz miješanje dok ne potamni, zatim zalijte vinom, pustite da ispari alkohol pa dodajte otprilike 300 ml vode u kojoj su se kuhali muzgavci. Dobro promiješajte pa dodajte muzgavce narezane na komade te dodajte krumpir narezan na komade, sol i papar. Ako nije dovoljno tekućine, dodajte još vode u kojoj su se kuhali muzgavci
Kuhajte dok krumpir ne omekša, bez miješanja, uz povremeno protresanje teće te po potrebi podlijevajte vodom u kojoj su se kuhali muzgavci. Pri kraju dodajte prošek i nasjeckani peršin te kušajte treba li još soli.
