U zimskim tmurnim danima nema boljeg nego na stol donijeti kripnu kaštradinu (iako u Zagori neki kažu i koštradina), tradicionalno jelo koje vraća snagu, tijelu donosi energiju. A evo vam i recepta kako je pripremiti, onako po domaći, da kuća zamiriše. Neki će reći prismrdi toliko da svi susjedi oćute kako se kod vas u dubokom loncu nešto posebno krčka. Oni koji u njoj guštaju odmah će vam kazati kako je po pitanju kaštradine najbolji dio priče u sitnom vezu, u glođanju koščica i zadovoljnom mrmljanju. I da je najbolje meso od lanjskog janjeta, mlado, lipo, mekano, staro do najviše dvije godine.

Ali nekada, kada je vladala neimaština, ništa se bacalo nije, pa je svit u koštradinu stavlja staru ovčetinu i jarce. Ali ne kako neki misle zbog njenog osebujnog mirisa mesa prča jarca, onog koji za sobom kada prođu ostavlja smrad kakvog na zemlji nema. On se čuvao za druge važnije stvari. E, a to što kaštradina nekima vonja ubi Bože, i to se može lako riješiti bacanjem prve vode u kuhanju. S kojim će otići i ona njena žestina i brojnima neugodan vonj. Ili što se u novim vremenima preferira, uzimanjem mladog mesa koje onda, kažu oni što se u aoštradini od gušta dave, miriše bolje od najlipšeg parfema. Tko je za izazov neka krene...

Kaštradina s kiselim kupusom i fažolom (za četiri osobe)

Sastojci:

- Kilogram suhe kaštradine

- Pola kilograma kiselog kupusa

- Četiri šalice fažola

- Deset deka sjeckane pancete

- Kapula, luk

- Malo brašna

- Malo crvene paprike

Priprema:

Meso zaliti vodom i to toliko da ga taman prelije. Prokuhati i vodu baciti. Opet zaliti vodom i kuhati 45 minuta do sat vremena. Za to vrijeme prodinstati kiseli kupus. Fažol potopiti preko noći, vodu baciti, staviti ga u novu vodu i kuhati pola sata. Na tavi propirjati pancetu, na komadiće isjeckanu kapulu i luk, dodati malo brašna i paprike i sve potom ubaciti u posudu s grahom.

Grah i kiseli kupus poslužiti kao prilog uz kaštradinu.

U zimskim tmurnim danima nema boljeg nego na stol donijeti kripnu kaštradinu (iako u Zagori neki kažu i koštradina), tradicionalno jelo koje vraća snagu, tijelu donosi energiju. A evo vam i recepta kako je pripremiti, onako po domaći, da kuća zamiriše. Neki će reći prismrdi toliko da svi susjedi oćute kako se kod vas u dubokom loncu nešto posebno krčka. Oni koji u njoj guštaju odmah će vam kazati kako je po pitanju kaštradine najbolji dio priče u sitnom vezu, u glođanju koščica i zadovoljnom mrmljanju. I da je najbolje meso od lanjskog janjeta, mlado, lipo, mekano, staro do najviše dvije godine.

Ali nekada, kada je vladala neimaština, ništa se bacalo nije, pa je svit u koštradinu stavlja staru ovčetinu i jarce. Ali ne kako neki misle zbog njenog osebujnog mirisa mesa prča jarca, onog koji za sobom kada prođu ostavlja smrad kakvog na zemlji nema. On se čuvao za druge važnije stvari. E, a to što kaštradina nekima vonja ubi Bože, i to se može lako riješiti bacanjem prve vode u kuhanju. S kojim će otići i ona njena žestina i brojnima neugodan vonj. Ili što se u novim vremenima preferira, uzimanjem mladog mesa koje onda, kažu oni što se u aoštradini od gušta dave, miriše bolje od najlipšeg parfema. Tko je za izazov neka krene...

Kaštradina s kiselim kupusom i fažolom (za četiri osobe)

Sastojci:

- Kilogram suhe kaštradine

- Pola kilograma kiselog kupusa

- Četiri šalice fažola

- Deset deka sjeckane pancete

- Kapula, luk

- Malo brašna

- Malo crvene paprike

Priprema:

Meso zaliti vodom i to toliko da ga taman prelije. Prokuhati i vodu baciti. Opet zaliti vodom i kuhati 45 minuta do sat vremena. Za to vrijeme prodinstati kiseli kupus. Fažol potopiti preko noći, vodu baciti, staviti ga u novu vodu i kuhati pola sata. Na tavi propirjati pancetu, na komadiće isjeckanu kapulu i luk, dodati malo brašna i paprike i sve potom ubaciti u posudu s grahom.

Grah i kiseli kupus poslužiti kao prilog uz kaštradinu.

U zimskim tmurnim danima nema boljeg nego na stol donijeti kripnu kaštradinu (iako u Zagori neki kažu i koštradina), tradicionalno jelo koje vraća snagu, tijelu donosi energiju. A evo vam i recepta kako je pripremiti, onako po domaći, da kuća zamiriše. Neki će reći prismrdi toliko da svi susjedi oćute kako se kod vas u dubokom loncu nešto posebno krčka. Oni koji u njoj guštaju odmah će vam kazati kako je po pitanju kaštradine najbolji dio priče u sitnom vezu, u glođanju koščica i zadovoljnom mrmljanju. I da je najbolje meso od lanjskog janjeta, mlado, lipo, mekano, staro do najviše dvije godine.

Ali nekada, kada je vladala neimaština, ništa se bacalo nije, pa je svit u koštradinu stavlja staru ovčetinu i jarce. Ali ne kako neki misle zbog njenog osebujnog mirisa mesa ...
