Na veselje mnogih, ljeto u Hrvatskoj nije otkazano, dapače! Vrući ljetni mjeseci su pred vratima i nestrpljivo se očekuju prvi strani, ali i domaći gosti koje ovog vikenda očekuje gastro događaj od kojeg rastu zazubice.
Poznati hrvatski chef Mate Janković otvara hrvatsku gastro ljetnu sezonu kao gostujući chef u jednom od najpopularnijih restorana na hrvatskoj obali, Tempera streetfood&bar u Makarskoj. Kako bi proslavili početak još jedne zasigurno uspješne sezone, za otvorenje Tempere chef Janković pripremit će večeru s tri slijeda, a svaki slijed bit će popraćen jedinstvenim koktelima izrađenima pod budnim okom poznatog hrvatskog koktel majstora i prvaka Maria Majcena, piše Gloria.
Neodoljivi spoj neobičnih okusa zasigurno će zaintrigirati svačije nepce zahvaljujući namirnicama iz lokalnog uzgoja izvrsne kvalitete te osebujnom kreativnom vizijom priznatog chefa. Za predjelo gosti mogu očekivati paštetu od jetrice s chutney umakom od marelice i ukiseljenih trešanja te tradicionalne 'gole raviole' odnosno gnude od skute s pireom od slatkog graška, mente i pancete.
Riječ je o malim zalogajima nalik na njoke čija je ključna namirnica sir, a ne krumpir. Glavno jelo nikoga neće ostaviti ravnodušnim jer je u pitanju hama, autohtona jadranska vrsta ribe koja živi na dubinama većim od 30 metara.
Slasno i sočno riblje meso pripremljeno je s umakom od dagnji i svijeta šafrana uz prilog sezonskog povrća, zapečenog češnjaka te krumpira s vlascem. Kraj večeri zasladit će 'financier', tradicionalni francuski biskvit s kremom od vanilije i pečenom breskvom s bosiljkom. Svaki spomenuti slijed bit će popraćen specijalno odabranim vinom i koktelima po jedinstvenoj recepturi hrvatskog koktel prvaka Maria Majcena posebno stvorenim za ovu priliku.
Od samog početka, restoran i bar Tempera nametnuo se kao hit gastro destinacija na jadranskoj obali kad je prije tri godine po prvi puta otvorio svoja vrata, a sve zahvaljujući jedinstvenoj kreativnoj viziji i osebujnoj ponudi jela i pića. O uspjehu najbolje govori činjenica kako se upravo Tempera pronašla u svjetski priznatom gastronomskom vodiču Gault Millau kao restoran koji nikako ne biste trebali zaobići na Jadranu. Osim vrhunske kuhinje i izvrsnog odabira najbolji hrvatskih vina, zahvaljujući čarobnoj poziciji na modernom šetalištu makarske rivijere, interijer i eksterijer restorana jedan je od onih na koji nećete zaboraviti.
Službeni početak ljeta je pred vratima, a s njime i vrući, dugi dani, idealni za uživanje na jednoj od najatraktivnijih ljetnih terasa Jadrana, u dobrom društvu i s koktelom u ruci i večerom za pamćenje! Tempera streetfood&bar svoja vrata otvara ove subote 26. lipnja.
Nedavno se Mate Janković vratio iz Škotske gdje je pomagao uhodati posao vlasnicima Hrvatima, a angažirali ga na mjesec dana.
Na jednom gostovanju u Saxu je govorio o tome je li ikada zažalio što je izabrao baš ovo zanimanje...
- Apsolutno sam zažalio stotinu puta, jer moraš proći određeni put afirmacije. Ljudi koji imaju posao mrze ljude koji imaju karijeru. Svi mi želimo raditi svoj posao na najvišem mogućem nivo, i normalno da kroz proces toga mrziš sve što radiš. Recimo, ja mrzim čistiti ribu, ali nije postojao alternativni put do peći. Ne govorim o stotinama kilograma koje sam morao čistiti nego o tonama. Govorim o danima kada dolaziš na posao mamuran, jer imaš 18 godina, a čeka 380 kilograma sipe i posuda s hladnom vodom. I ne izlaziš dok to ne očistiš sve... Naravno da u procesu uspjeha zamrziš što radiš, ali onaj tko to preživi, iza toga se krije uspjeh, rekao je Mate.

- Kao chef morate voditi računa i o međuljudskim odnosima, kontrolirati cijeli proces, kao i odnose s konobarima, odgovorni ste za nabaku i troškove, počesto sami slažete tanjure prije nego li ih iznesete pred gosta, a uza sav taj stres morate biti kreativni i maštoviti u osmišljavanju novog menija… Taj vas posao melje, stalno ste pred očima gostiju iako vas ne vide. Brojni vrhunski chefovi počesto su na granici uračunljivosti. U francuskim restoranima njih 90 posto baca lonce po kuhinji i vrijeđa ljude s kojima radi…To je i struka koja ima najviše problema s ovisnostima…rekao je Janković.

Na veselje mnogih, ljeto u Hrvatskoj nije otkazano, dapače! Vrući ljetni mjeseci su pred vratima i nestrpljivo se očekuju prvi strani, ali i domaći gosti koje ovog vikenda očekuje gastro događaj od kojeg rastu zazubice.
Poznati hrvatski chef Mate Janković otvara hrvatsku gastro ljetnu sezonu kao gostujući chef u jednom od najpopularnijih restorana na hrvatskoj obali, Tempera streetfood&bar u Makarskoj. Kako bi proslavili početak još jedne zasigurno uspješne sezone, za otvorenje Tempere chef Janković pripremit će večeru s tri slijeda, a svaki slijed bit će popraćen jedinstvenim koktelima izrađenima pod budnim okom poznatog hrvatskog koktel majstora i prvaka Maria Majcena, piše Gloria.
Neodoljivi spoj neobičnih okusa zasigurno će zaintrigirati svačije nepce zahvaljujući namirnicama iz lokalnog uzgoja izvrsne kvalitete te osebujnom kreativnom vizijom priznatog chefa. Za predjelo gosti mogu očekivati paštetu od jetrice s chutney umakom od marelice i ukiseljenih trešanja te tradicionalne 'gole raviole' odnosno gnude od skute s pireom od slatkog graška, mente i pancete.
Riječ je o malim zalogajima nalik na njoke čija je ključna namirnica sir, a ne krumpir. Glavno jelo nikoga neće ostaviti ravnodušnim jer je u pitanju hama, autohtona jadranska vrsta ribe koja živi na dubinama većim od 30 metara.
Slasno i sočno riblje meso pripremljeno je s umakom od dagnji i svijeta šafrana uz prilog sezonskog povrća, zapečenog češnjaka te krumpira s vlascem. Kraj večeri zasladit će 'financier', tradicionalni francuski biskvit s kremom od vanilije i pečenom breskvom s bosiljkom. Svaki spomenuti slijed bit će popraćen specijalno odabranim vinom i koktelima po jedinstvenoj recepturi hrvatskog koktel prvaka Maria Majcena posebno stvorenim za ovu priliku.
Od samog početka, restoran i bar Tempera nametnuo se kao hit gastro destinacija na jadranskoj obali kad je prije tri godine po prvi puta otvorio svoja vrata, a sve zahvaljujući jedinstvenoj kreativnoj viziji i osebujnoj ponudi jela i pića. O uspjehu najbolje govori činjenica kako se upravo Tempera pronašla u svjetski priznatom gastronomskom vodiču Gault Millau kao restoran koji nikako ne biste trebali zaobići na Jadranu. Osim vrhunske kuhinje i izvrsnog odabira najbolji hrvatskih vina, zahvaljujući čarobnoj poziciji na modernom šetalištu makarske rivijere, interijer i eksterijer restorana jedan je od onih na koji nećete zaboraviti.
Službeni početak ljeta je pred vratima, a s njime i vrući, dugi dani, idealni za uživanje na jednoj od najatraktivnijih ljetnih terasa Jadrana, u dobrom društvu i s koktelom u ruci i večerom za pamćenje! Tempera streetfood&bar svoja vrata otvara ove subote 26. lipnja.
Nedavno se Mate Janković vratio iz Škotske gdje je pomagao uhodati posao vlasnicima Hrvatima, a angažirali ga na mjesec dana.
Na jednom gostovanju u Saxu je govorio o tome je li ikada zažalio što je izabrao baš ovo zanimanje...
- Apsolutno sam zažalio stotinu puta, jer moraš proći određeni put afirmacije. Ljudi koji imaju posao mrze ljude koji imaju karijeru. Svi mi želimo raditi svoj posao na najvišem mogućem nivo, i normalno da kroz proces toga mrziš sve što radiš. Recimo, ja mrzim čistiti ribu, ali nije postojao alternativni put do peći. Ne govorim o stotinama kilograma koje sam morao čistiti nego o tonama. Govorim o danima kada dolaziš na posao mamuran, jer imaš 18 godina, a čeka 380 kilograma sipe i posuda s hladnom vodom. I ne izlaziš dok to ne očistiš sve... Naravno da u procesu uspjeha zamrziš što radiš, ali onaj tko to preživi, iza toga se krije uspjeh, rekao je Mate.

- Kao chef morate voditi računa i o međuljudskim odnosima, kontrolirati cijeli proces, kao i odnose s konobarima, odgovorni ste za nabaku i troškove, počesto sami slažete tanjure prije nego li ih iznesete pred gosta, a uza sav taj stres morate biti kreativni i maštoviti u osmišljavanju novog menija… Taj vas posao melje, stalno ste pred očima gostiju iako vas ne vide. Brojni vrhunski chefovi počesto su na granici uračunljivosti. U francuskim restoranima njih 90 posto baca lonce po kuhinji i vrijeđa ljude s kojima radi…To je i struka koja ima najviše problema s ovisnostima…rekao je Janković.
