Grad Kayseri, smješten u srcu Anatolije, ne samo da oduševljava svojom bogatom poviješću već i gastronomskim blagom koje čini pravu poslasticu za gurmane. Među neodoljivim delicijama koje krase ovo područje, posebno se ističe Yaglama - tanke pogače nalik tortiljama, ispunjene sočnim mljevenim mesom i svježim povrćem poslužene uz umak od jogurta.
Ova tradicionalna poslastica nije samo ukusna već i izuzetno svestrana. Yaglama može poslužiti kao izvor inspiracije za brza jela kada imate preostali mesni umak, poput bolognesea ili svježe povrće koje želite iskoristiti.
Osim toga, ljubitelji hrskavosti mogu dodatno uživati u ovom jelu tako što će kratko zapeći tortilje u pećnici, dodajući im dodatnu dimenziju okusa.

Yaglama
Tijesto:
1 šalica tople vode
1 šalica toplog mlijeka
1 žlica soli
1 desertna žlica granuliranog šećera
2 žlice ulja
5 šalica brašna
1 pakiranje kvasca
Nadjev od mljevenog mesa:
500 grama mljevenog mesa
2 srednje glavice luka
1 zelena paprika
1 crvena paprika
2 češnja češnjaka
1 žlica koncentrata od rajčice
1 šalica pasate od rajčice
1 šalica za kavu maslinovog ulja
1 čaša vode
1 žličica soli i papra
1 žličica čili papričice po želji
1 žličica kumina po želji
Umak:
1 zdjelica jogurta
3 češnja češnjaka
sol, papar
1 žlica isjeckanog peršina
Priprema:
Prvo pripremite tijesto: u dublju zdjelu dodajte vodu, mlijeko, ulje, šećer i sol i kvasac te promiješajte. Zatim dodajte brašno i zamijesite tijesto. Kad ste dobili glatku smjesu, pokrijte ga krpom i pričekajte 30 minuta.
U međuvremenu pripremite mljeveno meso. Stavite mljeveno meso u tavu, dodajte malo ulja i pecite. Nasjeckajte luk, češnjak i papriku na sitno pa ih dodajte u lonac. Nakon što se dobro zapeče, dodajte pasatu od rajčice i začine te kuhajte još 10 minuta.
Dignuto tijesto podijelite na 12 jednakih dijelova. Svaki od njih razvaljajte na 22-23 cm - otprilike kao veće tortilje i ispecite tijesto u tavi s obje strane.
Dodajte mljeveno meso na svaku tanku pogaču i nastavite s ovim postupkom dok ne potrošite sve sastojke. Nakon dodavanja mljevenog mesa na vrh podijelite ga na četiri dijela.
Na to staviti jogurt s umakom od češnjaka te pospite peršinom ili poslužite uz umak sa strane.

Yaglama
Tijesto:
1 šalica tople vode
1 šalica toplog mlijeka
1 žlica soli
1 desertna žlica granuliranog šećera
2 žlice ulja
5 šalica brašna
1 pakiranje kvasca
Nadjev od mljevenog mesa:
500 grama mljevenog mesa
2 srednje glavice luka
1 zelena paprika
1 crvena paprika
2 češnja češnjaka
1 žlica koncentrata od rajčice
1 šalica pasate od rajčice
1 šalica za kavu maslinovog ulja
1 čaša vode
1 žličica soli i papra
1 žličica čili papričice po želji
1 žličica kumina po želji
Umak:
1 zdjelica jogurta
3 češnja češnjaka
sol, papar
1 žlica isjeckanog peršina
Priprema:
Prvo pripremite tijesto: u dublju zdjelu dodajte vodu, mlijeko, ulje, šećer i sol i kvasac te promiješajte. Zatim dodajte brašno i zamijesite tijesto. Kad ste dobili glatku smjesu, pokrijte ga krpom i pričekajte 30 minuta.
U međuvremenu pripremite mljeveno meso. Stavite mljeveno meso u tavu, dodajte malo ulja i pecite. Nasjeckajte luk, češnjak i papriku na sitno pa ih dodajte u lonac. Nakon što se dobro zapeče, dodajte pasatu od rajčice i začine te kuhajte još 10 minuta.
Dignuto tijesto podijelite na 12 jednakih dijelova. Svaki od njih razvaljajte na 22-23 cm - otprilike kao veće tortilje i ispecite tijesto u tavi s obje strane.
Dodajte mljeveno meso na svaku tanku pogaču i nastavite s ovim postupkom dok ne potrošite sve sastojke. Nakon dodavanja mljevenog mesa na vrh podijelite ga na četiri dijela.
Na to staviti jogurt s umakom od češnjaka te pospite peršinom ili poslužite uz umak sa strane.
