Sirnica, pinca, pogača, taj slatki simbol Uskrsa, za mnoge je jedna od najkompliciranijih stvari za napraviti u kužini. Sasvim razumljivo, jer ta je tradicionalna slastica uvijek predmet komentara, a hoće li biti lijepi ili ružni nije uvijek ovisno o domaćici koja ih je pekla. Ili domaćinu, naravno. Za izvrsnu sirnicu treba imati nešto iskustva, a ono se najbolje stječe odmalena, uz mamu i baku, no čak i oni koji ih nikada nisu pekli mogu, uz dobre savjete i recepte te nešto vježbe, postati eksperti u pripremi ove obožavane blagdanske slastice.
Kad je riječ o receptu, za sirnice, kao i u slučaju mnogih drugih starinskih jela, postoji jako puno "pravih" i "najboljih" recepata, a koji je od njih zaista pravi i najbolji odlučit ćete sami. Pitate li nas, najbolji je onaj koji vam najbolje uspije. Ako dosad niste bili osobito zadovoljni rezultatima koje ste postizali prateći recept koji ste dobili u dotu, nudimo vam nekoliko novih opcija. Ove smo recepte prikupili od naših omiljenih gastro blogerica iz Splita, Trogira i Šibenika i premda ih još nismo stigli isprobati, zbog toga što volimo sve drugo što Anka, Mare i Nina kuhaju i peku vjerujemo da su im i sirnice, pince i pogače za svaku pohvalu.

Sirnica (Anka Slišković)
Sastojci:
1kg brašna
150 g šećera
60 g maslaca (ili kombinacija maslaca i masti)
3 cijela jaja
3 žumanjka
1 naranča (sok i kora)
2 žlice ruma Bočica Biškićeve arome za sirnice
, maraskina
1 limun (naribana korica)
1 kocka kvasa
3 žlice kiselog vrhnja
100- 150 ml mlijeka
2 vanilija šećera
malo soli
Priprema:
Kvasac izmrviti u malo mlijeka i pomiješati s 1 žlicom šećera i 1 žlicom brašna. Ostaviti na toplome da se digne. Mikserom izmiješati jaja, vanilija šećer, sol i korice. Kad je masa izjednačena postupno dodavati pola količine brašna. Nakon toga dodati vrhnje, mlijeko, dignuti kvasac, rakiju i rum, sok od naranče,maslac, ostatak brašna te nastaviti ručno mješati.
Tijesto mora biti kompaktno i dobro izrađeno, ako je potrebno dodati malo brašna. Ostaviti na toplome da se digne. Kad se tijesto udvostruči premijesiti, oblikovati kugle i ostaviti i dalje na toplome da se diže.
Nakon toga zarezati škarama na 3 dijela, premazati (žumanjak, ulje), obilato posuti šećerom i peći 20 minuta u zagrijanoj pećnici na 100°. Temperaturu povećati na 170°i peći još 15-20 Ili pečenje prilagodit svojom pećnici Važno je da sve bude sobne temperature

Sastojci:
375 g glatkog brašna
375 g oštrog brašna
1 kocka svježeg kvasca
250 ml mlijeka
1 prašak za pecivo
125 ml ulja
125 g šećera
1 vanilin šećer
3 jaja
1 žlica ruma
korica naranče i limuna
malo arome ružinog likera
žlica maraslkina
prstohvat soli
Priprema:
Kvasac aktivirajte u malo mlijeka i šećera (oduzmite od navedne količine).
Zamijesite tijesto s ostalim sastojcima. Ostavite ga da naraste. Premijesite tijesto pa ga još jednom stavite da naraste, a zatim ga podijelite na 3-4 komada, oblikujte loptice i ostavite ih još malo na toplom.
Pred pečenje zarežite pince škarama, premažite ih razmućenim jajem i pospite razbijenim kockama šećera.
Pecite pince 30 minuta u pećnici zagrijanoj na 160 stupnjeva Celzija.

Uskrsna pogača (Nina Mrvica)
Sastojci:
200 ml mlijeka
40 g svježeg kvasca ili 13 g suhog kvasca
50 g maslaca, sobne temperature
50 g masti, sobne temperature
100 g šećera
3 jaja L veličine
1 žličica ekstrakta vanilije
1 žličica ružine vodice
sok pola naranče
500 g glatkog brašna
prstohvat soli
korica jedne naranče, neprskane
korica jednog limuna, neprskani
šećer za posipanje
Priprema:
Pomiješajte mlako mlijeko s kvascem i šećerom, ostavite da odstoji 10 minuta pa smjesi dodajte dva cijela jaja i jedan žumanjak, (bjelanjak ostavite za premazivanje). Dodajte sok pola naranče, aromu vanilije i ruže, te koricu naranče i limuna, promiješajte, dodajte brašno i sol pa nastavite miješati mikserom.
U serijama uz miksanje dodajte mast i maslac. Nastavite miksati 15-ak minuta dok se tijesto ne počne odvajati od posude i ne postane sjajno i glatko. Po potrebi dodajte još malo brašna.
Tijesto prebacite u nauljenu posudu, prekrijte je prozirnom folijom i ostavite na toplom. Nakon što se udvostručilo, tijesto kratko premijesite, podijelite na dva dijela pa oblikujte kugle. Posložite ih na lim za pečenje obložen papirom za pečenje ostavljajući razmak, prekrijte krpom i ostavite na toplom mjestu sat vremena.
Pećnicu ugrijte na 180 stupnjeva. Pogače premažite bjelanjkom pa ih zarežite kuhinjskim škarama u oblik slova X. Po želji ih pospite komadićima šećera.
Pogače pecite 15 minuta pa smanjite pećnicu na 150 stupnjeva i nastavite peći još 15 minuta ili do željene boje pa ih ohladite na rešetki za hlađenje.

Sirnica, pinca, pogača, taj slatki simbol Uskrsa, za mnoge je jedna od najkompliciranijih stvari za napraviti u kužini. Sasvim razumljivo, jer ta je tradicionalna slastica uvijek predmet komentara, a hoće li biti lijepi ili ružni nije uvijek ovisno o domaćici koja ih je pekla. Ili domaćinu, naravno. Za izvrsnu sirnicu treba imati nešto iskustva, a ono se najbolje stječe odmalena, uz mamu i baku, no čak i oni koji ih nikada nisu pekli mogu, uz dobre savjete i recepte te nešto vježbe, postati eksperti u pripremi ove obožavane blagdanske slastice.
Kad je riječ o receptu, za sirnice, kao i u slučaju mnogih drugih starinskih jela, postoji jako puno "pravih" i "najboljih" recepata, a koji je od njih zaista pravi i najbolji odlučit ćete sami. Pitate li nas, najbolji je onaj koji vam najbolje uspije. Ako dosad niste bili osobito zadovoljni rezultatima koje ste postizali prateći recept koji ste dobili u dotu, nudimo vam nekoliko novih opcija. Ove smo recepte prikupili od naših omiljenih gastro blogerica iz Splita, Trogira i Šibenika i premda ih još nismo stigli isprobati, zbog toga što volimo sve drugo što Anka, Mare i Nina kuhaju i peku vjerujemo da su im i sirnice, pince i pogače za svaku pohvalu.

Sirnica (Anka Slišković)
Sastojci:
1kg brašna
150 g šećera
60 g maslaca (ili kombinacija maslaca i masti)
3 cijela jaja
3 žumanjka
1 naranča (sok i kora)
2 žlice ruma Bočica Biškićeve arome za sirnice
, maraskina
1 limun (naribana korica)
1 kocka kvasa
3 žlice kiselog vrhnja
100- 150 ml mlijeka
2 vanilija šećera
malo soli
Priprema:
Kvasac izmrviti u malo mlijeka i pomiješati s 1 žlicom šećera i 1 žlicom brašna. Ostaviti na toplome da se digne. Mikserom izmiješati jaja, vanilija šećer, sol i korice. Kad je masa izjednačena postupno dodavati pola količine brašna. Nakon toga dodati vrhnje, mlijeko, dignuti kvasac, rakiju i rum, sok od naranče,maslac, ostatak brašna te nastaviti ručno mješati.
Tijesto mora biti kompaktno i dobro izrađeno, ako je potrebno dodati malo brašna. Ostaviti na toplome da se digne. Kad se tijesto udvostruči premijesiti, oblikovati kugle i ostaviti i dalje na toplome da se diže.
Nakon toga zarezati škarama na 3 dijela, premazati (žumanjak, ulje), obilato posuti šećerom i peći 20 minuta u zagrijanoj pećnici na 100°. Temperaturu povećati na 170°i peći još 15-20 Ili pečenje prilagodit svojom pećnici Važno je da sve bude sobne temperature

Sastojci:
375 g glatkog brašna
375 g oštrog brašna
1 kocka svježeg kvasca
250 ml mlijeka
1 prašak za pecivo
125 ml ulja
125 g šećera
1 vanilin šećer
3 jaja
1 žlica ruma
korica naranče i limuna
malo arome ružinog likera
žlica maraslkina
prstohvat soli
Priprema:
Kvasac aktivirajte u malo mlijeka i šećera (oduzmite od navedne količine).
Zamijesite tijesto s ostalim sastojcima. Ostavite ga da naraste. Premijesite tijesto pa ga još jednom stavite da naraste, a zatim ga podijelite na 3-4 komada, oblikujte loptice i ostavite ih još malo na toplom.
Pred pečenje zarežite pince škarama, premažite ih razmućenim jajem i pospite razbijenim kockama šećera.
Pecite pince 30 minuta u pećnici zagrijanoj na 160 stupnjeva Celzija.

Uskrsna pogača (Nina Mrvica)
Sastojci:
200 ml mlijeka
40 g svježeg kvasca ili 13 g suhog kvasca
50 g maslaca, sobne temperature
50 g masti, sobne temperature
100 g šećera
3 jaja L veličine
1 žličica ekstrakta vanilije
1 žličica ružine vodice
sok pola naranče
500 g glatkog brašna
prstohvat soli
korica jedne naranče, neprskane
korica jednog limuna, neprskani
šećer za posipanje
Priprema:
Pomiješajte mlako mlijeko s kvascem i šećerom, ostavite da odstoji 10 minuta pa smjesi dodajte dva cijela jaja i jedan žumanjak, (bjelanjak ostavite za premazivanje). Dodajte sok pola naranče, aromu vanilije i ruže, te koricu naranče i limuna, promiješajte, dodajte brašno i sol pa nastavite miješati mikserom.
U serijama uz miksanje dodajte mast i maslac. Nastavite miksati 15-ak minuta dok se tijesto ne počne odvajati od posude i ne postane sjajno i glatko. Po potrebi dodajte još malo brašna.
Tijesto prebacite u nauljenu posudu, prekrijte je prozirnom folijom i ostavite na toplom. Nakon što se udvostručilo, tijesto kratko premijesite, podijelite na dva dijela pa oblikujte kugle. Posložite ih na lim za pečenje obložen papirom za pečenje ostavljajući razmak, prekrijte krpom i ostavite na toplom mjestu sat vremena.
Pećnicu ugrijte na 180 stupnjeva. Pogače premažite bjelanjkom pa ih zarežite kuhinjskim škarama u oblik slova X. Po želji ih pospite komadićima šećera.
Pogače pecite 15 minuta pa smanjite pećnicu na 150 stupnjeva i nastavite peći još 15 minuta ili do željene boje pa ih ohladite na rešetki za hlađenje.
