Kvasca i dalje nema. Nemojte ga ni tražiti, provjerili smo. Čini se da je Hrvatima kvasac ono što je drugima toaletni papir. Moguće je da ulijeva sigurnost. Dok god je u kući kruha, neće biti gladi. I tako to. I eto pravog trenutka za predstaviti jedan recept, već neko vrijeme hit na društvenim mrežama, no u nas, reklo bi se, nepoznanica.

Možda ste ga i sami primijetili prije koji tjedan kad se obilježavao dan sv. Patrika pa su objave #irishsodabread preplavile Instagram. No, kako je od tada pola svijeta završilo u izolaciji i karanteni, popularnost mu ne opada...

Što je to uopće irski soda kruh? Kruh, kao i onaj s kvascem, samo u ovom slučaju puno je brže gotov, navodno je lakše probavljiv i vrlo ukusan i nešto je čvršće strukture od ovog prvog. No sve što nas sada zanima je da ovaj ne zahtijeva trenutno nedostupni kvasac.

Moram vam priznati da ovaj irski recept još nisam isprobala, no kruh s praškom za pecivo nije mi stran. S praškom za pecivo i malo sode bikarbone radim kruh od pirovog brašna i slanutka, kao i kruh od kvinoje (ne kudite konja kojeg niste jahali!) i sasvim sam zadovoljna kako ispadaju.

Nisu onako rahli i spužvasti kao kruh s kvascem, ali, bože moj, što se može, kvasca nema. Doduše, može se uzgojiti kvasac u kućnoj radinosti, kako smo vam objasnili ovdje, no problem je što mu treba oko sedam dana da postane upotrebljiv, pa ako ne možete čekati zanemarite skepsu i isprobajte neki od recepata, ima ih barem stotinu, a neki uključuju dodatke poput suvica i sjemena koromača.

Jedan od njih je s provjerene stranice Sally's Baking Addiction, i traži mlaćenicu, koju možete krivotvoriti mješavinom mlijeka i vode u koju ste kapnuli malo limunovog soka.

Irski kruh bez kvasca

420 mililitara mlaćenice (sirutke)

1 veliko jaje

515 grama brašna

38 grama šećera

1 žličica praška za pecivo

1 žličica soli

70 grama maslaca

Zagrijte pećnicu na 200 stupnjeva, a posudu za pečenje obložite papirom za pečenje ili ju namastite pa pospite brašnom. Najbolje je koristiti posudu dimenzija 20X30 centimetara.  

Pomiješajte mlaćenicu i jaje. U drugoj posudi pomiješajte brašno, prašak za pecivo, sol i šećer pa dodajte maslac izrezan na kockice. Razradite prstima. 

Dodajte jaje i mlaćenicu. Miješajte dok možete, a kad postane pregusto prebacite na pobrašnjenu površinu. Izmijesite pa oblikujte oblikujte štrucu ili pogaču.

Prebacite u posudu za pečenje i oštrim nožem na vrhu urežite X.

Pecite dok ne dobije lijepu boju, oko 45 minuta. Na pola pečenja vrh lagano prekrijte folijom, da kora ne zagori.

Kad je pečen, izvadite ga iz pećnice i pustite desetak minuta da se malo ohladi. Izvadite iz posude za pečenje pa narežite.

Pokriven će ostati svjež do dva dana, a narezanog ga možete i zamrznuti pa čuvati do tri mjeseca.

Kvasca i dalje nema. Nemojte ga ni tražiti, provjerili smo. Čini se da je Hrvatima kvasac ono što je drugima toaletni papir. Moguće je da ulijeva sigurnost. Dok god je u kući kruha, neće biti gladi. I tako to. I eto pravog trenutka za predstaviti jedan recept, već neko vrijeme hit na društvenim mrežama, no u nas, reklo bi se, nepoznanica.

Možda ste ga i sami primijetili prije koji tjedan kad se obilježavao dan sv. Patrika pa su objave #irishsodabread preplavile Instagram. No, kako je od tada pola svijeta završilo u izolaciji i karanteni, popularnost mu ne opada...

Što je to uopće irski soda kruh? Kruh, kao i onaj s kvascem, samo u ovom slučaju puno je brže gotov, navodno je lakše probavljiv i vrlo ukusan i nešto je čvršće strukture od ovog prvog. No sve što nas sada zanima je da ovaj ne zahtijeva trenutno nedostupni kvasac.

Moram vam priznati da ovaj irski recept još nisam isprobala, no kruh s praškom za pecivo nije mi stran. S praškom za pecivo i malo sode bikarbone radim kruh od pirovog brašna i slanutka, kao i kruh od kvinoje (ne kudite konja kojeg niste jahali!) i sasvim sam zadovoljna kako ispadaju.

Nisu onako rahli i spužvasti kao kruh s kvascem, ali, bože moj, što se može, kvasca nema. Doduše, može se uzgojiti kvasac u kućnoj radinosti, kako smo vam objasnili ovdje, no problem je što mu treba oko sedam dana da postane upotrebljiv, pa ako ne možete čekati zanemarite skepsu i isprobajte neki od recepata, ima ih barem stotinu, a neki uključuju dodatke poput suvica i sjemena koromača.

Jedan od njih je s provjerene stranice Sally's Baking Addiction, i traži mlaćenicu, koju možete krivotvoriti mješavinom mlijeka i vode u koju ste kapnuli malo limunovog soka.

Irski kruh bez kvasca

420 mililitara mlaćenice (sirutke)

1 veliko jaje

515 grama brašna

38 grama šećera

1 žličica praška za pecivo

1 žličica soli

70 grama maslaca

Zagrijte pećnicu na 200 stupnjeva, a posudu za pečenje obložite papirom za pečenje ili ju namastite pa pospite brašnom. Najbolje je koristiti posudu dimenzija 20X30 centimetara.  

Pomiješajte mlaćenicu i jaje. U drugoj posudi pomiješajte brašno, prašak za pecivo, sol i šećer pa dodajte maslac izrezan na kockice. Razradite prstima. 

Dodajte jaje i mlaćenicu. Miješajte dok možete, a kad postane pregusto prebacite na pobrašnjenu površinu. Izmijesite pa oblikujte oblikujte štrucu ili pogaču.

Prebacite u posudu za pečenje i oštrim nožem na vrhu urežite X.

Pecite dok ne dobije lijepu boju, oko 45 minuta. Na pola pečenja vrh lagano prekrijte folijom, da kora ne zagori.

Kad je pečen, izvadite ga iz pećnice i pustite desetak minuta da se malo ohladi. Izvadite iz posude za pečenje pa narežite.

Pokriven će ostati svjež do dva dana, a narezanog ga možete i zamrznuti pa čuvati do tri mjeseca.

Kvasca i dalje nema. Nemojte ga ni tražiti, provjerili smo. Čini se da je Hrvatima kvasac ono što je drugima toaletni papir. Moguće je da ulijeva sigurnost. Dok god je u kući kruha, neće biti gladi. I tako to. I eto pravog trenutka za predstaviti jedan recept, već neko vrijeme hit na društvenim mrežama, no u nas, reklo bi se, nepoznanica.

Možda ste ga i sami primijetili prije koji tjedan kad se obilježavao dan sv. Patrika pa su objave #irishsodabread preplavile Instagram. No, kako je od tada pola svijeta završilo u izolaciji i karanteni, popularnost mu ne opada...
