Koje ulje koristiti za prženje? Do prije 15-20 godina svi su za tu svrhu masovno koristili sojino, potom je u modu ušlo repičino, a zatim suncokretovo, da bi svi koji su bili u tijeku s kulinarskim trendovima počeli, poput "Golog kuhara", pržiti na maslinovom ulju, na opći užas starijih domaćica koje su uporno ponavljale da se "to u nas nikad tako nije radilo". Raspravama o tome koje je ulje najbolje za prženje "ulje na vatru" su dolile nove znanstvene spoznaje o štetnosti pojedinih vrsta ulja, a o neutemeljenim glasinama da ne govorimo. Jedno je ipak sigurno - utvrđeno je da je jako važno voditi računa o nečemu što se naziva smoking point ili u slobodnom prijevodu točka dimljenja, a odnosi se na temperaturu u kojoj ulje prilikom zagrijavanja počinje dimiti.

Takva je pojava znak da se ulje počelo razgrađivati, što može negativno utjecati na okus i nutritivnu vrijednost hrane. Kada se ulje raspadne, dolazi do kemijske reakcije poznate kao toplinska degradacija koja uključuje oksidaciju, reakciju čiji su nusproizvodi štetni za zdravlje. Dakle, odabir ulja za prženje nipošto nije samo stvar okusa.

Posljednjih se godina spominjalo kako je upravo maslinovo ulje porpuno pogrešan izbor za prženje, zbog toga što počinje gorjeti već na 165-190°C, što je poprilično nisko u odnosu na, primjerice, sojino, koje dobro podnosi temperature sve do 230 stupnjeva Celzija. Kako je ovo pitanje izazivalo brojne kontroverze, nedavno je provedeno istraživanje čiji su rezultati objavljeni u Journal of Agricultural and Food Chemistry, znanstvenom časopisu Američkog kemijskog društva.

Istraživanjem je analizirano kako se pojedine vrste ulja ponašaju kad su izložene visokim temperaturama, a ispitana ulja bila su maslinovo, kukuruzno, sojino i suncokretovo. Pobjednik je maslinovo, kao ulje koje najbolje podnosi podnosi visoke temperature koje se postižu tijekom prženja i to čak uslijed višekratne uporabe.

Tijekom istraživanja sva su ulja zagrijana na vrlo visokim temperaturama (160°-180°) i ponovno korištena desetak puta, a maslinovo se pokazalo najstabilnijim po pitanju otpornosti na toplinu i oksidativno propadanje.

Najgorim se, gle iznenađenja, pokazalo suncokretovo.

Napomenimo još samo da prema tablici u kojoj su ulja poredana prema visini svoje točke dimljenja obično maslinovo ulje, za razliku od ekstradjevičanskog ima puno bolja svojstva, bolja čak i od gore spomenutog sojinog i to za deset "punata".

Koje ulje koristiti za prženje? Do prije 15-20 godina svi su za tu svrhu masovno koristili sojino, potom je u modu ušlo repičino, a zatim suncokretovo, da bi svi koji su bili u tijeku s kulinarskim trendovima počeli, poput "Golog kuhara", pržiti na maslinovom ulju, na opći užas starijih domaćica koje su uporno ponavljale da se "to u nas nikad tako nije radilo". Raspravama o tome koje je ulje najbolje za prženje "ulje na vatru" su dolile nove znanstvene spoznaje o štetnosti pojedinih vrsta ulja, a o neutemeljenim glasinama da ne govorimo. Jedno je ipak sigurno - utvrđeno je da je jako važno voditi računa o nečemu što se naziva smoking point ili u slobodnom prijevodu točka dimljenja, a odnosi se na temperaturu u kojoj ulje prilikom zagrijavanja počinje dimiti.

Takva je pojava znak da se ulje počelo razgrađivati, što može negativno utjecati na okus i nutritivnu vrijednost hrane. Kada se ulje raspadne, dolazi do kemijske reakcije poznate kao toplinska degradacija koja uključuje oksidaciju, reakciju čiji su nusproizvodi štetni za zdravlje. Dakle, odabir ulja za prženje nipošto nije samo stvar okusa.

Posljednjih se godina spominjalo kako je upravo maslinovo ulje porpuno pogrešan izbor za prženje, zbog toga što počinje gorjeti već na 165-190°C, što je poprilično nisko u odnosu na, primjerice, sojino, koje dobro podnosi temperature sve do 230 stupnjeva Celzija. Kako je ovo pitanje izazivalo brojne kontroverze, nedavno je provedeno istraživanje čiji su rezultati objavljeni u Journal of Agricultural and Food Chemistry, znanstvenom časopisu Američkog kemijskog društva.

Istraživanjem je analizirano kako se pojedine vrste ulja ponašaju kad su izložene visokim temperaturama, a ispitana ulja bila su maslinovo, kukuruzno, sojino i suncokretovo. Pobjednik je maslinovo, kao ulje koje najbolje podnosi podnosi visoke temperature koje se postižu tijekom prženja i to čak uslijed višekratne uporabe.

Tijekom istraživanja sva su ulja zagrijana na vrlo visokim temperaturama (160°-180°) i ponovno korištena desetak puta, a maslinovo se pokazalo najstabilnijim po pitanju otpornosti na toplinu i oksidativno propadanje.

Najgorim se, gle iznenađenja, pokazalo suncokretovo.

Napomenimo još samo da prema tablici u kojoj su ulja poredana prema visini svoje točke dimljenja obično maslinovo ulje, za razliku od ekstradjevičanskog ima puno bolja svojstva, bolja čak i od gore spomenutog sojinog i to za deset "punata".
