SASTOJCI:
200 g arborio riže
200 g cikle
100 g dimljenog tofua
40 g hrena
25 g stabljike celera
100 g otkoštenih višanja u sirupu
10 g šećera
500 ml povrtnog temeljca
25 g veganskog parmezana
50 g biljne masti
10 g soli
4 g mljevenog papra

PRIPREMA:
150 g pečene cikle zajedno sa sokom staviti u blender uz dodatak prstohvata soli, izblendati dok ne postane pire bez grudica. Ako ima grudica, dodati malo vode ili po potrebi protisnuti kroz sitno sito. Ostatak cikle narezati na na brunoise (kockice veličine otprilike 3 mm), tofu isto tako.
Zagrijati tavu na srednje jaku vatru i na nju dodati malo biljne masti. Dodati kockice cikle i posuti prstohvatom šećera i miješati konstantno dok ne dobiju tamnije crvenu boju. Odvojiti na ubrus da se ostatak masnoće upije, isto tako ponoviti postupak s tofuom, samo bez šećera. Pržiti dok ne dobije zlatno žutu boju.
U posudu staviti biljnu mast, zagrijati na srednje jakoj vatri. Dodati rižu i miješati dok se ne zastakli zatim pomalo dodavati temeljac (po 100 ml) uz neprestano miješanje. Zatim dodati prethodno napravljeni pire od cikle i hren.
Sačuvati malo temeljca u slučaju da se rižoto stisne.
Prije samog završetka rižota dodati tanko sjeckane stabljike celera, umiješati, posoliti, popapriti.
Servirati na tanjur, posuti kockicama cikle i tofua, preliti žlicom sirupa od višanja i dodati 5-6 višanja. Sve posuti veganskim parmezanom, piše Dobra hrana.

150 g pečene cikle zajedno sa sokom staviti u blender uz dodatak prstohvata soli, izblendati dok ne postane pire bez grudica. Ako ima grudica, dodati malo vode ili po potrebi protisnuti kroz sitno sito. Ostatak cikle narezati na na brunoise (kockice veličine otprilike 3 mm), tofu isto tako.
Zagrijati tavu na srednje jaku vatru i na nju dodati malo biljne masti. Dodati kockice cikle i posuti prstohvatom šećera i miješati konstantno dok ne dobiju tamnije crvenu boju. Odvojiti na ubrus da se ostatak masnoće upije, isto tako ponoviti postupak s tofuom, samo bez šećera. Pržiti dok ne dobije zlatno žutu boju.
U posudu staviti biljnu mast, zagrijati na srednje jakoj vatri. Dodati rižu i miješati dok se ne zastakli zatim pomalo dodavati temeljac (po 100 ml) uz neprestano miješanje. Zatim dodati prethodno napravljeni pire od cikle i hren.
Sačuvati malo temeljca u slučaju da se rižoto stisne.
Prije samog završetka rižota dodati tanko sjeckane stabljike celera, umiješati, posoliti, popapriti.
Servirati na tanjur, posuti kockicama cikle i tofua, preliti žlicom sirupa od višanja i dodati 5-6 višanja. Sve posuti veganskim parmezanom, piše Dobra hrana.
