Najnovija znanstvena istraživanja pokazuju da, poput riba i ostalih glavonožaca, ulovljene lignje, ako se ne usmrte odmah, tijekom gušenja na zraku proizvode toksine, a zbog intenzivne dehidracije i velike količine mliječne kiseline, koji smanjuju kvalitetu njihova mesa i otvrdnjavaju ga, u nekim slučajevima toliko da postaje žilavo poput gume.
No, znanstvenici upozoravaju da sve ulovljene lignje treba što prije usmrtiti, a ne samo one koje se žele zadržati za hranu, jer nije moralno prihvatljivo mučiti ih sporom smrću ostavljanjem da polako ugibaju na obali, pajolama…
Tri srca
A kako što bezbolnije usmrtiti lignju?
Da bi se to učinilo, mora joj se odrezati živac mozga koji leži u njenom vratu. Poznato je da lignja ima tri srca, ali jedan mozak. Ako joj se probadanjem vrata oštrim predmetom prereže živac mozga, lignja odmah ugiba i posve pobijeli, jer kromoforne stanice njenoga tijela odmah izgube funkciju.
Tim postupkom postižemo još nešto. Naime, većina lignji, kao i sipa, ne stigne prije takvog usmrćivanja izbaciti crnilo! Tako se ono sačuva za izradu delikatese, ali se sačuva i odjeća ribolovca, te sve ostalo što bi moglo biti zacrnjeno.
Japanci su najviše učinili na izučavanju i primjeni ovakvog usmrćivanju lignje i sipe. Izmislili su i ikejime (ikijime) metodu najbržeg i najhumanijeg ubijanja riba i glavonožaca. Izvodi se umetanjem nekoga šiljka u stražnji dio mozga, što izaziva trenutačnu smrt ako se učini ispravno.
Napravili su i posebne alate koji taj čin čine lakšim, brzim i učinkovitim. Za ikejime lignje i sipe taj alat, poznat kao Ike Jime, na rukohvatu ima oštri produžetak nalik odvijaču. Kraj produžetka sliči maloj špatuli, s tim da ona ima oblik polumjeseca, naravno vrlo oštrog. Svrha mu je lakše prodiranje kroz meso vrata i presijecanje živca lignje.

Sam čin usmrćivanja je lak, puno lakši nego kod riba. Nakon što se lignja prihvati, najbolje mrežnom prihvatnicom, treba je očima gore položiti na tvrdu podlogu i rukom prihvatiti za tuljak. Tijekom tih radnji najveća je opasnost od izbacivanja crnila.
Bijela boja
Zatim treba potražiti mozak, koji je između očiju, malo bliže tijelu. Od njega živčani sistem ide prema tijelu i s druge strane prema glavi i ticalima. Usmrćivanje se izvodi kao što je prikazano slikama od 1 do 5.
Najprije se treba prerezati živčani sistem koji vodi u tuljak. Ika Jime se vrhom okrenutim prema repu najprije postavi pod kutom od oko 60 stupnjeva iza glave lignje, a ispred plašta, a potom naglim pokretom zarije u lignju.

Kad se to dogodi prekida se dotok krvi u tuljak i on pobijeli, dok glava i pipci zadržavaju boje. Ne učini li se to dobro, samo će polovina, lijeva ili desna, tuljka pobijeliti. Tada treba postupak ponoviti uz neznatno pomicanje alata u stranu koja nije pobijelila.

Nakon toga treba eutanazirati i glavu s pipcima. Alat se izvadi, pod kutom od oko 60 stupnjeva okrene vrhom prema glavi i zarije između očiju lignje. Ako se to obavi valjano, pobijelit će glava i kraci.

Na opisani način usmrćena lignja, ali i sipa, puno je mekša, lakše probavljiva i puno ukusnija.

[text] => {OCMSplitter}Najnovija znanstvena istraživanja pokazuju da, poput riba i ostalih glavonožaca, ulovljene lignje, ako se ne usmrte odmah, tijekom gušenja na zraku proizvode toksine, a zbog intenzivne dehidracije i velike količine mliječne kiseline, koji smanjuju kvalitetu njihova mesa i otvrdnjavaju ga, u nekim slučajevima toliko da postaje žilavo poput gume.
No, znanstvenici upozoravaju da sve ulovljene lignje treba što prije usmrtiti, a ne samo one koje se žele zadržati za hranu, jer nije moralno prihvatljivo mučiti ih sporom smrću ostavljanjem da polako ugibaju na obali, pajolama…
Tri srca
A kako što bezbolnije usmrtiti lignju?
Da bi se to učinilo, mora joj se odrezati živac mozga koji leži u njenom vratu. Poznato je da lignja ima tri srca, ali jedan mozak. Ako joj se probadanjem vrata oštrim predmetom prereže živac mozga, lignja odmah ugiba i posve pobijeli, jer kromoforne stanice njenoga tijela odmah izgube funkciju.
Tim postupkom postižemo još nešto. Naime, većina lignji, kao i sipa, ne stigne prije takvog usmrćivanja izbaciti crnilo! Tako se ono sačuva za izradu delikatese, ali se sačuva i odjeća ribolovca, te sve ostalo što bi moglo biti zacrnjeno.
Japanci su najviše učinili na izučavanju i primjeni ovakvog usmrćivanju lignje i sipe. Izmislili su i ikejime (ikijime) metodu najbržeg i najhumanijeg ubijanja riba i glavonožaca. Izvodi se umetanjem nekoga šiljka u stražnji dio mozga, što izaziva trenutačnu smrt ako se učini ispravno.
Napravili su i posebne alate koji taj čin čine lakšim, brzim i učinkovitim. Za ikejime lignje i sipe taj alat, poznat kao Ike Jime, na rukohvatu ima oštri produžetak nalik odvijaču. Kraj produžetka sliči maloj špatuli, s tim da ona ima oblik polumjeseca, naravno vrlo oštrog. Svrha mu je lakše prodiranje kroz meso vrata i presijecanje živca lignje.

Sam čin usmrćivanja je lak, puno lakši nego kod riba. Nakon što se lignja prihvati, najbolje mrežnom prihvatnicom, treba je očima gore položiti na tvrdu podlogu i rukom prihvatiti za tuljak. Tijekom tih radnji najveća je opasnost od izbacivanja crnila.
Bijela boja
Zatim treba potražiti mozak, koji je između očiju, malo bliže tijelu. Od njega živčani sistem ide prema tijelu i s druge strane prema glavi i ticalima. Usmrćivanje se izvodi kao što je prikazano slikama od 1 do 5.
Najprije se treba prerezati živčani sistem koji vodi u tuljak. Ika Jime se vrhom okrenutim prema repu najprije postavi pod kutom od oko 60 stupnjeva iza glave lignje, a ispred plašta, a potom naglim pokretom zarije u lignju.

Kad se to dogodi prekida se dotok krvi u tuljak i on pobijeli, dok glava i pipci zadržavaju boje. Ne učini li se to dobro, samo će polovina, lijeva ili desna, tuljka pobijeliti. Tada treba postupak ponoviti uz neznatno pomicanje alata u stranu koja nije pobijelila.

Nakon toga treba eutanazirati i glavu s pipcima. Alat se izvadi, pod kutom od oko 60 stupnjeva okrene vrhom prema glavi i zarije između očiju lignje. Ako se to obavi valjano, pobijelit će glava i kraci.

Na opisani način usmrćena lignja, ali i sipa, puno je mekša, lakše probavljiva i puno ukusnija.
