Zdjela tek pečenih, fino posoljenih i hrskavih kokica koje se tope u ustima može vam uljepšati večer uz dobar film, a isto vam je tako može pokvariti ako su vam kokice ispale loše - suhonjave, žilave, zagorene, s puno sjemenki koje se nisu otvorile. Kako smo strastveni obožavatelji kokica, potražili smo savjete za njihovu pripremu, a ako ste i vi barem upola zaluđeni koikicama kao i mi, sigurni smo da će vam dobro doći.

dugo smo vjerovali kako je tvar u sorti i obilazili trgovine u potrazi za najuboljima - možda ste već i sami primijetili kako se kukuruz kokičar razlikuje po veličini i boji od brenda do brenda. Dugo smo vjerovali da su Franckove najbolje i u principu se njih najviše držali, s povremenim posezanjem za kokičarem iz ponude Marjan voća, a povremeno bismo se pomogli čak i onim "refužo", ako bi odgovarao opisu koji smo smatrali optimalnim: veliko zrno, nešto svjetlija boja. Međutim, nakon par razočaranja prestali smo vjerovati u ovu teoriju i okrenuli se istraživanju tehnika pripreme.

Nakon puno, ali zaista puno ispečenih tura iz iskustva vam možemo reći da je slučaju ulja na kojem se kokice peku ne vrijedi "manje je više". Više je, definitivno, više jer rezultira sočnijim kokicama kojima ne trebaju nikakvi preljevi ni dodavanje maslaca. No što je s tehnikom? Ono što vam, takoiđer iz iskustva, možemo reći je da kokice nipošto ne smijete praviti onako usput - trebate im posvetiti punu pažnju i marljivo ih, ali baš marljivo, protresati.

Također nije preporučljivo ubaciti kokice u hladno ulje pa čekati da se sve skupa zagrije - stvari se odvijaju bolje i brže ako pričekate da se ulje zagrije do temperature potrebne za pucanje kokica, a je li ju doseglo znat ćete lako uz pomoć 2-3 zrna koja ćete ubaciti odmah: nakon što puknu, temperatura je dovoljno visoka da mkožete ubaciti ostatak. 

Soljenje kukuruza unaprijed nije dobra ideja jer čini vanjsku opnu žilavijom i otežava pucanje kokica. Dobar potez je, međutim, povremeno pažljivo dizanje poklopca, što omogućuje ipari - koja bi inače mogla smočiti kokice čineći ih žilavijima - da izađe.

Ono što nam tek preostaje isprobati, a mora se priznati da dobro zvuči u teoriji, je ono što neki nazivaju tajnom savršeno ispečenih kokica koje pri tome imaju još izraženiji okus podrazumijeva jedan dodatni korak: namakanje. Sve što je potrebno napraviti je namočiti kukuruz u običnoj vodi nekih desetak minuta prije nego ga krenemo pržiti (naravno, tek pošto smo ga dobro osušili). Ovaj dodatni korak trebao bi omekšati ljusku zbog čega će kokice bolje pucati i biti prhkije.

Vrijedilo bi iskušati i ovu "caku": nakon što se ubace kokice, poklopljenu teću trebalo bi na 30 sekundi maknuti s vatre. Taj dodatni korak trebao bi omogućiti kokicama da se zagriju na temperaturu tik do one potrebne za pucanjez bog čega će se sve otvoriti u približno isto vrijeme, zbog čega će ih manji broj izgorjeti i ostati neotvoren. 

I mala zanimljivost za kraj: znate li zašto kokice pucaju? Zbog toga što se u sredini zrna, unutar škrobaste jezgre, nalazi malena kap vode koja se pri izlaganju visokoj temperaturi pretvara u paru i širi, uzrokujući pucanje zrna kukuruza.

Zdjela tek pečenih, fino posoljenih i hrskavih kokica koje se tope u ustima može vam uljepšati večer uz dobar film, a isto vam je tako može pokvariti ako su vam kokice ispale loše - suhonjave, žilave, zagorene, s puno sjemenki koje se nisu otvorile. Kako smo strastveni obožavatelji kokica, potražili smo savjete za njihovu pripremu, a ako ste i vi barem upola zaluđeni koikicama kao i mi, sigurni smo da će vam dobro doći.

dugo smo vjerovali kako je tvar u sorti i obilazili trgovine u potrazi za najuboljima - možda ste već i sami primijetili kako se kukuruz kokičar razlikuje po veličini i boji od brenda do brenda. Dugo smo vjerovali da su Franckove najbolje i u principu se njih najviše držali, s povremenim posezanjem za kokičarem iz ponude Marjan voća, a povremeno bismo se pomogli čak i onim "refužo", ako bi odgovarao opisu koji smo smatrali optimalnim: veliko zrno, nešto svjetlija boja. Međutim, nakon par razočaranja prestali smo vjerovati u ovu teoriju i okrenuli se istraživanju tehnika pripreme.

Nakon puno, ali zaista puno ispečenih tura iz iskustva vam možemo reći da je slučaju ulja na kojem se kokice peku ne vrijedi "manje je više". Više je, definitivno, više jer rezultira sočnijim kokicama kojima ne trebaju nikakvi preljevi ni dodavanje maslaca. No što je s tehnikom? Ono što vam, takoiđer iz iskustva, možemo reći je da kokice nipošto ne smijete praviti onako usput - trebate im posvetiti punu pažnju i marljivo ih, ali baš marljivo, protresati.

Također nije preporučljivo ubaciti kokice u hladno ulje pa čekati da se sve skupa zagrije - stvari se odvijaju bolje i brže ako pričekate da se ulje zagrije do temperature potrebne za pucanje kokica, a je li ju doseglo znat ćete lako uz pomoć 2-3 zrna koja ćete ubaciti odmah: nakon što puknu, temperatura je dovoljno visoka da mkožete ubaciti ostatak. 

Soljenje kukuruza unaprijed nije dobra ideja jer čini vanjsku opnu žilavijom i otežava pucanje kokica. Dobar potez je, međutim, povremeno pažljivo dizanje poklopca, što omogućuje ipari - koja bi inače mogla smočiti kokice čineći ih žilavijima - da izađe.

Ono što nam tek preostaje isprobati, a mora se priznati da dobro zvuči u teoriji, je ono što neki nazivaju tajnom savršeno ispečenih kokica koje pri tome imaju još izraženiji okus podrazumijeva jedan dodatni korak: namakanje. Sve što je potrebno napraviti je namočiti kukuruz u običnoj vodi nekih desetak minuta prije nego ga krenemo pržiti (naravno, tek pošto smo ga dobro osušili). Ovaj dodatni korak trebao bi omekšati ljusku zbog čega će kokice bolje pucati i biti prhkije.

Vrijedilo bi iskušati i ovu "caku": nakon što se ubace kokice, poklopljenu teću trebalo bi na 30 sekundi maknuti s vatre. Taj dodatni korak trebao bi omogućiti kokicama da se zagriju na temperaturu tik do one potrebne za pucanjez bog čega će se sve otvoriti u približno isto vrijeme, zbog čega će ih manji broj izgorjeti i ostati neotvoren. 

I mala zanimljivost za kraj: znate li zašto kokice pucaju? Zbog toga što se u sredini zrna, unutar škrobaste jezgre, nalazi malena kap vode koja se pri izlaganju visokoj temperaturi pretvara u paru i širi, uzrokujući pucanje zrna kukuruza.

Zdjela tek pečenih, fino posoljenih i hrskavih kokica koje se tope u ustima može vam uljepšati večer uz dobar film, a isto vam je tako može pokvariti ako su vam kokice ispale loše - suhonjave, žilave, zagorene, s puno sjemenki koje se nisu otvorile. Kako smo strastveni obožavatelji kokica, potražili smo savjete za njihovu pripremu, a ako ste i vi barem upola zaluđeni koikicama kao i mi, sigurni smo da će vam dobro doći.

dugo smo vjerovali kako je tvar u sorti i obilazili trgovine u potrazi za najuboljima - možda ste već i sami primijetili kako se kukuruz kokičar razlikuje po veličini i boji od brenda do brenda. Dugo smo vjerovali da su Franckove najbolje i u principu se njih najviše držali, s povremenim posezanjem za kokičarem iz ponude Marjan voća, a povremeno bismo se pomog...
