Cijeli Split se digao na noge kad je na gradilištu kontroverznog poslovnog objekta u centru grada srušena pelegrinka. Nikakvo čudo, osobito zbog toga što je riječ o jednoj od omiljenih vrsta drveća ne samo u Splitu nego i na ovim prostorima. Pelegrinka, koštela, košćela, fafarikul, ladonja, koprivić, poprivić, taferikola...  prestat ćemo s nabrajanjem jer pomalo zvuči kao da se zezamo, a samo je riječ o brojnim slikovitim nazivima za to lijepo stablo koje zauzvrat traži jako malo, a daruje nas tako raskošnom hladovinom. No je li vam poznato da sjenovita krošnja nije jedina blagodat omiljene pelegrinke?

Nekoć je bilo dobro poznato da je plod ovog drveta, hajdemo ga konačno nazvati i službenim nazivom - europski koprivić ili Celtis australis (nema veze s Australijom, australis u ovom slučaju označava južne krajeve) - jestiv, ljekovit i ukusan. Danas ga većinom zobaju samo ptičice, ali slatkast je i može se jesti sirov ili se koristiti u pripremi džemova i sličnih poslastica. U narodnoj je medicini na glasu kao pomoć kod bolnih mjesečnica i kao dobro sredstvo za ublažavanje probavnih tegoba. No nećemo sad o probavnim tegobama...

Zanimljivo je da je na ovim prostorima kulinarska upotreba pelegrinke bila poznata još u antičko doba,a danas se pretpostavlja da je baš Celtis australis bio famozni lotos koji su u Homerovoj Odiseji jeli "žderači" ili "jedači lotosa", ovisno o prijevodu, pa se nagađa da bi to mogla biti još jedna indicija da je legendarni lukavac dio svog desetogodišnjeg lutanja proveo ploveći Jadranom. No tko će ga znati. Držimo se mi činjenica, a jedna od njih je da je plod koštele jestiv i ukusan.

Kad smo već kod ukusa, taj poprilično ovisi o stupnju zrelosti ploda, a neki ga, govoreći o sasvim zrelim i mekanim bobicama, opisuju kao spoj okusa tikve i datulje. Ne zvuči loše, zar ne. Dobra vijest je i da bobice dozrijevaju upravo u ovo vrijeme, sredinom listopada i tijekom studenog, no imajte na umu da su nedovoljno zrele bobice pomalo trpke pa ako vam takav okus nije baš po guštu, bilo bi vam bolje malo pričekati. Imajte na umu i da su plodovi koštele mali, tankog mesa i velike koštice koja tijekom zime postaje ugodno hrskava i okusom podsjeća na sjemenke.

Sad se već možda pitate kako uopće jesti plod pelegrinke, osim onako, po uzoru na ptice. U tom slučaju, evo vam nekoliko ideja. Najjednostavniji način za konzumaciju bio bi mljevenje cijelih plodova i njihovo miješanje s orasima, bademima ili lješnjacima ili pak sjemenkama poput lana te potom korištenje u receptima u koje inače idu spomenuti orašasti plodovi i sjemenke - od kolača preko keksa i peciva do zdravih pločica, smoothieja i pahuljica za doručak, čini se da su mogućnosti beskonačne.Velika prednost ove metode je to što je se koristi cijeli plod i što se količina lako može povećati miješanjem s lakše dostupnim namirnicama.

Neki spominju džemove od ovog ploda, no budimo realni - koliko bi vam vremena trebalo za prikupiti dovoljno bobica i na koliko biste se pelegrinki trebali popeti za teglicu-dvije džema? No, ako vas uhvati volja, evo kako ćete ga pripremiti.

Opranim bobicama treba ukloniti peteljke i staviti ih u lonac s dovoljno vode da ih potpuno pokrije te ih pustiti da se kuhaju oko pola sata. Nakon što im kožica malo omekša, zgnječite ih gnječilicom za krumpire kako biste lakše odvojili meso od sjemenki. Zgnječene bobice potom stavite u cjedilo, hvatajući tekućinu u kojoj su se kuhale u drugu teću. Pomoću kuhače pritisnite bobice kako bi što više pulpe prošlo kroz cjedilo, a dio mesa možete izdvojiti ručno iz smjese koja je ostala u cjedilu. Kad izmjerite koliku ste količinu pulpe dobili, izračunajte koliko vam treba šećera, a mjera je 1:4 u korist bobica. Dodajte ih tekućini koju ste sačuvali uz malo soka od limuna pa kuhajte dok se ne zgusne, oko pola sata. 

Nismo pronašli recept, ali za pretpostaviti je da bi se ovim bobicama lako moglo aromatizirati liker ili rakiju, po uzoru na višnjevaču, rogačušu ili orahovicu. Tu vam savjet ni ne treba, zar ne. Samo čista staklenka, domaća rakija i nešto šećera. I malo strpljenja, naravno, dok se sastojci lijepo ne prožmu.

Zanimljiv je i recept za mlijeko od bobica pelegrinke i nije ga osobito teško pripremiti. Bobice, njih oko 150 grama, treba pomiješati s oko 750 mililitara vode i po želji s malo meda te ubaciti u blender i blendati dok ne nastane glatka smjesa bež boje. Smjesu je zatim potrebno kuhati na laganoj vatri oko pola sata i zatim procijediti kroz gustu gazu. Mlijeko bi trebalo biti slatkasto i okusom pomalo "bacati" na mlijeko od badema.

Cijeli Split se digao na noge kad je na gradilištu kontroverznog poslovnog objekta u centru grada srušena pelegrinka. Nikakvo čudo, osobito zbog toga što je riječ o jednoj od omiljenih vrsta drveća ne samo u Splitu nego i na ovim prostorima. Pelegrinka, koštela, košćela, fafarikul, ladonja, koprivić, poprivić, taferikola...  prestat ćemo s nabrajanjem jer pomalo zvuči kao da se zezamo, a samo je riječ o brojnim slikovitim nazivima za to lijepo stablo koje zauzvrat traži jako malo, a daruje nas tako raskošnom hladovinom. No je li vam poznato da sjenovita krošnja nije jedina blagodat omiljene pelegrinke?

Nekoć je bilo dobro poznato da je plod ovog drveta, hajdemo ga konačno nazvati i službenim nazivom - europski koprivić ili Celtis australis (nema veze s Australijom, australis u ovom slučaju označava južne krajeve) - jestiv, ljekovit i ukusan. Danas ga većinom zobaju samo ptičice, ali slatkast je i može se jesti sirov ili se koristiti u pripremi džemova i sličnih poslastica. U narodnoj je medicini na glasu kao pomoć kod bolnih mjesečnica i kao dobro sredstvo za ublažavanje probavnih tegoba. No nećemo sad o probavnim tegobama...

Zanimljivo je da je na ovim prostorima kulinarska upotreba pelegrinke bila poznata još u antičko doba,a danas se pretpostavlja da je baš Celtis australis bio famozni lotos koji su u Homerovoj Odiseji jeli "žderači" ili "jedači lotosa", ovisno o prijevodu, pa se nagađa da bi to mogla biti još jedna indicija da je legendarni lukavac dio svog desetogodišnjeg lutanja proveo ploveći Jadranom. No tko će ga znati. Držimo se mi činjenica, a jedna od njih je da je plod koštele jestiv i ukusan.

Kad smo već kod ukusa, taj poprilično ovisi o stupnju zrelosti ploda, a neki ga, govoreći o sasvim zrelim i mekanim bobicama, opisuju kao spoj okusa tikve i datulje. Ne zvuči loše, zar ne. Dobra vijest je i da bobice dozrijevaju upravo u ovo vrijeme, sredinom listopada i tijekom studenog, no imajte na umu da su nedovoljno zrele bobice pomalo trpke pa ako vam takav okus nije baš po guštu, bilo bi vam bolje malo pričekati. Imajte na umu i da su plodovi koštele mali, tankog mesa i velike koštice koja tijekom zime postaje ugodno hrskava i okusom podsjeća na sjemenke.

Sad se već možda pitate kako uopće jesti plod pelegrinke, osim onako, po uzoru na ptice. U tom slučaju, evo vam nekoliko ideja. Najjednostavniji način za konzumaciju bio bi mljevenje cijelih plodova i njihovo miješanje s orasima, bademima ili lješnjacima ili pak sjemenkama poput lana te potom korištenje u receptima u koje inače idu spomenuti orašasti plodovi i sjemenke - od kolača preko keksa i peciva do zdravih pločica, smoothieja i pahuljica za doručak, čini se da su mogućnosti beskonačne.Velika prednost ove metode je to što je se koristi cijeli plod i što se količina lako može povećati miješanjem s lakše dostupnim namirnicama.

Neki spominju džemove od ovog ploda, no budimo realni - koliko bi vam vremena trebalo za prikupiti dovoljno bobica i na koliko biste se pelegrinki trebali popeti za teglicu-dvije džema? No, ako vas uhvati volja, evo kako ćete ga pripremiti.

Opranim bobicama treba ukloniti peteljke i staviti ih u lonac s dovoljno vode da ih potpuno pokrije te ih pustiti da se kuhaju oko pola sata. Nakon što im kožica malo omekša, zgnječite ih gnječilicom za krumpire kako biste lakše odvojili meso od sjemenki. Zgnječene bobice potom stavite u cjedilo, hvatajući tekućinu u kojoj su se kuhale u drugu teću. Pomoću kuhače pritisnite bobice kako bi što više pulpe prošlo kroz cjedilo, a dio mesa možete izdvojiti ručno iz smjese koja je ostala u cjedilu. Kad izmjerite koliku ste količinu pulpe dobili, izračunajte koliko vam treba šećera, a mjera je 1:4 u korist bobica. Dodajte ih tekućini koju ste sačuvali uz malo soka od limuna pa kuhajte dok se ne zgusne, oko pola sata. 

Nismo pronašli recept, ali za pretpostaviti je da bi se ovim bobicama lako moglo aromatizirati liker ili rakiju, po uzoru na višnjevaču, rogačušu ili orahovicu. Tu vam savjet ni ne treba, zar ne. Samo čista staklenka, domaća rakija i nešto šećera. I malo strpljenja, naravno, dok se sastojci lijepo ne prožmu.

Zanimljiv je i recept za mlijeko od bobica pelegrinke i nije ga osobito teško pripremiti. Bobice, njih oko 150 grama, treba pomiješati s oko 750 mililitara vode i po želji s malo meda te ubaciti u blender i blendati dok ne nastane glatka smjesa bež boje. Smjesu je zatim potrebno kuhati na laganoj vatri oko pola sata i zatim procijediti kroz gustu gazu. Mlijeko bi trebalo biti slatkasto i okusom pomalo "bacati" na mlijeko od badema.
